Mary, a fellow 'Mom to all boys', asked for my chocolate chip pumpkin cookies recipe.
Here goes:
1/2 c. butter or margarine, softened
1 1/4 c. brown sugar
2 eggs
1 tsp vanilla
1 c. canned pumpkin
2 c. flour
4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
1 c. raisins or chocolate chips
1 c. chopped nuts
Cream butter and sugar. Beat in 1 egg at a time. Add vanilla and pumpkin.
Stir remaining ingredients together and add. Mix well. Drop by spoonful onto greased cookie sheet. Bake at 375F for 15 minutes until lightly browned.

Very important: Don't forget to lick the beater!

*I use pumpkin from my garden that is mashed and frozen. If it looks much more liquidy than canned pumpkin, I try to spoon off some of the liquid before using.
*I undercook my cookies just a touch to keep them extra-chewy.

I started to skim some of your older posts and saw your were in Mexico. Were you all on a missions trip. If I spelled that wrong I am sorry. I am tired and I can't figure out how to spell it.

MMmmmmm, pumpkin! I don't think you can even buy canned pumpkin here. Unfortunately we don't have any growing at the moment but they are so cheap and never out of season so we eat a LOT of pumpkin... I'll have to try these!
